Special Summertime Surprise!

In celebration of my 100th post (today is #99) I wanted to do something cute and special. I have so much fun with my blog, finding interesting sites, recipes and tidbits to share...I wanted to do something special for my friends and followers. (I know there are only a handful of you, but I am grateful you stop in and check up on me every once in a while!)

Mrs. Borden’s Creamy Lemon Pie



3 egg yolks
(1) 14 ounce can Eagle Brand Sweetened Condensed Milk (not evaporated milk)
1/2 cup fresh lemon juice
Blend with a mixer until creamy. Pour into prepared graham cracker crust. Bake at 325 for 30-35 minutes. Cool, then chill in the refrigerator for 3 hours. Just before serving add the fresh whipped cream. Garnish with sliced lemon.

I think it’s best to prepare this pie the day before to make sure it’s good and cold…but make the whipped cream just before serving.

Homemaking tip: Freeze desserts!!

I LOVE making treats, but I do not love what eating a ton of treats does to me. So, whenever I make treats that aren't going to a friend, etc., I put them on a couple of paper plates, then in a ziploc bag, then label them, date them and freeze them. It's perfect for when I forget to plan dessert when we have company, or if I have a sweet craving, but no other sweets in the house. AND I won't eat a ton, if I make predictable portions with the plates of treats.

Homemaking Tip:

We're in the middle of moving (ugh!) and my pie pans are somewhere in the pile of already packed boxes and I had a bunch of frozen strawberries and blueberries I wanted to use to make something for a memorial day bbq...so....I made tarts!!! So fun and so easy. Just make your pie filling and set it aside. Make your pie crust (or take it out of the box...whichever works for you!) and roll it into small circles. I made mine about 5" across for smaller tarts. Put a small spoonful of pie filling in and fold the edges up around the filling. The filling should show. Bake at 400 for 25 min. or until crusts are golden brown.
They were a big hit. I love making things that look so pretty (and are so yummy) but are still super easy.

Here's a Summer-time Mom tip (not necessarily for the "home" but good to know with little kids around) ... I always keep a small tupperware, ziplock bag or other small flat container full of band-aids & other small handy first-aid essentials in my glovebox! I've needed it a few times & have been SO glad I had it in the car!

hello! I LOVE reading your blogs - I think you are such a great writer! I also love hearing what is going on with you, Tom, Briggy and Oliver !

Although, I am not the best cook / baker in the entire world I am trying... I am obsessed with Food Network and all of their shows - I also LOVE to read cook books!

My favorite person on Food Network is Tyler Florence - and he has a delicious soup recipe that I could literally eat for a week straight! I know it is not a summer recipe - but it sooo good. Really good if you make it with some biscuits or popovers which are my fav!
